Founded in 1893, this Bakersfield institution, until recently, was a boarding house for immigrant Basque shepherds.
Still a center for the local basque community, it continues to offer multi-course meals served up family-style
at three shared tables. People gather in the bar before breakfast, lunch and dinner. Evenings, parties are called
one by one into the dining room and led to their assigned places at three tables: two seating 32 each and one seating
42 (That's 120 diners!). Dinner changes nightly, but always consists of two entrees and several side dishes. Saturday
evening (oxtail stew and fried chicken) and Sunday evening (beef stew and baked chicken) routinely draw the most
solo diners.
